Breakfast Omelet.

I am planning to try this yummy little treat very soon.


2 MINUTE MICROWAVE MUG OMELET

Start to finish: 2 minutes (prep: 1 minute)

Servings: 1

2 large eggs
2 to 3 tablespoons shredded cheddar cheese
2 tablespoons crumbled cooked ham or bacon
1 tablespoon diced green bell pepper
salt and pepper

1. In a small bowl, beat eggs.
2. Spray a large microwave-safe mug with cooking spray. Coat evenly.
3. In the mug, combine eggs, cheese, ham and green pepper. Stir until mixed.
4. Microwave mug on high until mixture is completely set, about 1 minute.
5. Salt and pepper to taste.

Coconut Cream pie.

Impossible Pie,   Coconut Cream Pie.

All the ingredients are mixed together and poured into a pie tin, but when it cooks it forms its own crust with filling This has a coconut vanilla taste like a coconut cream pie

Ingredients

2 cups milk
1 cup shredded coconut
4 eggs
1 teaspoon vanilla extract
1/2 cup all purpose flour
8 Tablespoon butter
3/4 cup sugar
1/4 teaspoon ground nutmeg

Directions
Place milk, coconut, eggs, vanilla, flour, butter and sugar in blender. Mix well.
Pour into a greased and floured pie plate. Sprinkle nutmeg on top.
Bake at 350 degrees for 45 minutes.

Specially nice dinner

The boss gave me an extra day off since it has not been very busy this week with the Shuttle, so I decided to cook up something really nice. This is what I decided upon.Turned out really nice after I had thickened the juices to a lovely gravy and its enough for 2 good meals for us. Give it a try, its very easy.


Crock-pot Orange Chicken

Ingredients:
2 large carrots, peeled and sliced about 1/2-inch thick
2 large red or green bell peppers, cut into 1/2-inch chunks
3 cloves garlic, finely minced
4 boneless skinless chicken breasts
2 tsp. ground ginger
1 tsp. salt
1/2 tsp. pepper
8 ounces orange juice concentrate
2 cups Mandarin orange segments or fresh orange segments
2 Green onions, chopped
hot cooked rice
Directions:
Put carrots, peppers, garlic, then the chicken, ginger, salt, pepper & frozen orange juice in Crockpot. Cover and cook on LOW 4 to 6 hours. Serve chicken on hot cooked rice on platter. Top with orange segments and green onions. Serve chicken liquid in gravy boat, if desired.
